Job Purpose

To play an integral part in leading and managing +/-3-5 restaurant spanning an area. To grow like on like profitability in existing restaurants, with prospects of growing footprint of restaurants in your area of a strong and sound financial model. To maximize shareholder’s investment and facilitate wealth creation both in terms of profit and equity. To ensure that the organization leads the way by example in adhering strictly to “Brand Operations Standards”.

Key Performance Areas  

Financial and General Management

  • Manage the income statement of the restaurant, communicate results to your management team and develop & manage an action plan to control expense and improve conversion to profit.
  • Monitor business indicators( Sales Year on Year & Actual vs Budget; GP; Ticket Avg; Menu mix; Day parts; Complaints; Labour T/O; Payroll vs T/O), communicate results to your management team and develop & manage an action plan to promote the improvement of such indictors
  • Draw up restaurant budget with Store Managers
  • Execute and monitor that all daily, monthly and yearly reports & paperwork required by management is carried out timeously and correctly
  • Prepare operational and risk reports for management analysis
  • Prepare activity reports to inform management of the status and implementation plans of programmes, services and quality initiatives
  • Advise management on methods to bring about change
  • Ensure that your stores meet their GP, turnover budgets and staff attrition is kept to a minimum.

Strategic Management

  • To grow your area from a people, market share & profit perspective
  • To identify, understand and interpret problem areas in business and work towards rectifying these
  • Help store managers to determine their needs, plan implementation strategies for achieving their goals
  • To respond to crisis situations and work toward resolving any related problems, this could mean working after normal working hours. You will be required to work at least 1 night shift per week on a week end in any one of your areas stores.
  • Scan the local environment to identify emerging trends that will affect the organization
  • Understanding of the current and future climate of the company and industry

Marketing

  • Ensure the implementation of restaurant marketing plans
  • Ensure restaurant undertaking marketing are operationally sound and can deliver as promised
  • Stay informed via marketing mapping and develop and implement strategy for growth
  • Be fully compliant with brand
  • Brief and manage marketing activation
  • Stimulate localized marketing initiatives

Operations

  • Ensure strict compliance with Occupational Health & Safety Regulations and any other related legislation
  • Ensure strict adherence to SOP’s and “Operating System” compliance
  • Ensure that your stores pass Brand audits on a quarterly basis.
  • Ensure that your stores have the necessary government certificates up to date at all times

People Management

  • Identify, develop and retain talent, thereby contributing to realistically reduced staff turnovers in the restaurants.
  • Direct and coordinate activities of staff in restaurant, via store managers to ensure continuity in operation excellence, maximize returns on investments, and increase productivity.
  • Work with HR & Training personnel in dealing with employee grievances, discipline and ensure their effective implementation and management
  • Proactively manage diverse individuals to maximize performance. Recognize and adapt to individual difference in terms of career objectives, expertise, culture, interests, and other factors to facilitate working relationships.
  • Identity, manage and resolve potential and actual conflict through effective communication and relationship building skills. Maintain a sense of composure and credibility that reflects well on organization
  • To actively participate in and facilitate team effectiveness
  • Qualification Requirements

    • Full Grade 12 Certificate
    • Degree or equivalent qualification in General Management or Food and Beverage

    Experience Required

    • 2 years experience in middle management in a food-related or retail environment
    • Valid driver’s license
