Senior Cook / Chef at Urban Yard – Job Ref: 43

Chef responsibilities include studying recipes and preparing high-quality dishes in a faced paced kitchen.

You should be able to delegate tasks to kitchen staff to ensure meals are prepared in a timely manner. Also, you should be familiar with sanitation regulations.

Ultimately, you’ll prepare and deliver a complete menu that delights our guests – in a fast-paced, efficient and orderly kitchen and be responsible for the management and storage of stock.

  • Stay up to date with market-related prices and specials on ingredients
  • Construct seasonal menus with new or existing culinary creations ensuring the variety and quality of the servings
  • Be thorough in the record-keeping and stock control on administratively and physically
  • Ensure meals are prepared and streamlined and that the finished plating is presented well
  • Supervise Cooks and assist as needed
  • Slightly modify recipes to meet customers’ needs and requests (e.g. reduce salt, remove dairy)
  • Monitor food stock and place orders, ensure the labeling of food items and that the storage standards are exceeded
  • Check freshness of food and discard out-of-date items, through a duel sign off method
  • Ensure compliance with all health and safety regulations within the kitchen area

Requirements

  • Proven 5 years or more work experience as a Chef or Cook
  • Experience in a commercial restaurant not negotiable
  • Hands-on experience with various kitchen equipment
  • Advanced knowledge of culinary, grilling, baking and pastry techniques
  • Leadership skills
  • Ability to remain calm and undertake various tasks
  • Excellent time management abilities
  • Up-to-date knowledge of cooking techniques and recipes
  • Must be able to work well and methodically under pressure
  • Familiarity with sanitation regulations
  • Culinary school certificates and diplomas are a must / not negotiable
