Purpose of this role: To meet the growing needs of the business in the Butchery department
Job specifications/ responsibilities will include but not limited to the following:
Sales
- To achieve the budgeted turnover for the in-store butchery
- Sales growth over the previous year
- To achieve budgeted volume sales and growths over the previous year (kg)
- Serving customers and making up of meat orders for customers
Margin
- To achieve the budgeted rand value gross profit for in-store butchery
- To achieve the budgeted GP%
- Managing selling prices to achieve maximum returns for the company
- To do regular block tests ensuring that cost versus selling prices are achieved to maintain the budgeted GP% required
Stock Control
- Weekly stock counts are done on meat and meat related products
- Manage stock holding levels according to company standards and procedures
- Stock rotation that is in line with a first in, first out policy
Staff Management
- Staff scheduling and disciplines to ensure optimum production
- Staff hygiene and dress code for working in an area that does food preparation,
- Ensure that staff comply with all company policies and procedures when working in a food production facility
Production planning
Food Safety and Hygiene
- To ensure that the butchery complies with the company’s minimal requirement on both food safety and hygiene regulations
Administration and Ordering
- To do daily weekly and monthly administration related to the butchery
- Stock counts and receiving procedures as well as ordering procedures are followed
- Sell-buy date policy is strictly adhered to
- The ordering in of all raw materials related to the butchery items
- Receiving and quality control of stock ordered and received
- Plan of orders to ensure stock holdings are kept to a minimal
Ranging
- To ensure that defined product ranges are available for sale at all times of trade
- Service levels and on sales is maintained at all times
Production
- Planning of production to ensure service levels are maintained
- Reduce wastage and reworks to a minimal
- Ensure that the companies basic cutting and packaging standards are maintained
Requirements:
- More than 3 years of experience in Retail Meat Industry
- Minimum Grade 12 or Equivalent
- Experience in store core operations , in a similar environment or a related role
- Excellent interpersonal skills and customer orientation
- Attention to details and work under pressure
- Computer literate in MS office, MS out look
- Analytical ability
- Excellent communication skills
- Excellent ability to sell
- Excellent attention to detail & planning and organizing skills
- Excellent verbal and written communication
- Ability to Work Without Supervision
